The tradition of making fermented soya beans in Zhengchang, Xiantao, Hubei has endured for more than 600 years. The fermented soya beans are made from a particular soybean called "Liuyuepu" which is a native variety in the Jianghan Plain region and can be harvested as early as in June every year. The soy beans are selenium-rich, full and plump in shape and good in quality. As a result, the fermented soya beans made of them are naturally rich in selenium and protein, offering health benefits such as cancer and oxidation resistance, immune system enhancement, etc.
